  4. It was a low carb today:
AM: 1 scoop protein shake, banana, 1 TB almond butter

Baked apple with cinnamon and walnuts

Lunch: baked vegs (butternut squash, carrots, red onion, brussel sprouts)

    2 turkey meatballs

Dinner: Sauteed spinach, garlic and shrimp (2 TB olive oil)
1 container brown rice w/ onion, red pepper and 1 whole egg (weird version of "FRIED RICE" - BUT NOT BAD)

Jody - Erin comes home from college wanting her favorite meal, so what do I have to do...make her beef stew of course. I took an old recipe of mine and tweaked it to make it more healthy.
Cut lean beef into 1 1/2 in. cubes - dust with whole wheat flour. Brown in dutch oven (used cooking spray)Remove meat. In drippings cut up 1 large onion - cook for about 3 minutes. Add back meat, 3 cups of water, 3 beef bouilons, 1/2 tsp worschestire sauce, cover and simmer for 2 1/2 hours. In the end you can add potatoes, carrots, peas...really anything to finish it off. I had potatoes for Erin and lots of carrots with a bag of peas.

  8. Eugenia, looks great! Don't worry halibut is one of the higher in fat fish but it still isn't that high. Go to nutritiondata.com if you ever want to check anything on your own.
